Tomato Tart with Fresh Mozzarella: This was my first attempt at a tomato tart. It was good, but I have some ideas on how to make it even better. I really liked using my casserole pan rather than a baking sheet. It provided a deep dish influence, yet this certainly wasn’t a pizza. Buongiorno and happy Monday! Can’t think of a better Monday lunch than this. Those of you that know me know I’m not a good meal prepper, I just don’t get excited about the idea of having 17 containers in the fridge with specific meals made for the week. BUT, what I do love, is prepping a few things to keep on hand that make life easier throughout the week, especially for lunches since It’s out most frequent “grab and go” lunch. I always prep protein and 9 times out of 10 it’s chicken. I wouldn’t eat boring, flavorless, dry chicken, so I make sure whatever the marinade Is it’s flavorful and cook the chicken breast (usually on the grill even in the winter ) perfectly to insure juicy goodness in every bite. I make a lose meal plan for the week and Taylor my marinades around that, so this week it’s lots of Italian, Mediterranean inspired lunches (salads, pita wraps, quinoa bowls ) so I went with my lemon, garlic and rosemary marinade. I think I’d like to do a video all about a few favorite marinades transform plain protein (like chicken, fish and tofu ) to keep ready in the fridge for whenever hunger attacks. What do you think? Sweet Potatoes and Carrots with Herbed Yogurt When menu planning I try to incorporate as many colors and textures as possible into each dish, for both nutrition and taste reasons. Food should be pretty and exciting to eat! This dish checks all the boxes for what I'm looking for in an easy weeknight meal. Sweet potatoes and carrots are roasted with punchy spices until tender and drizzled with an addicting yogurt sauce and fresh herbs. Coconut or almond milk based yogurt would be a great dairy free alternative. Pair with your favorite protein for a quick and satisfying meal. Ingredients: 4 Sweet Potatoes, peeled and sliced into wedges 4 Carrots, peeled and sliced into chunks Olive Oil Salt/Pepper 1t Chili Powder 1t Harissa Spice 1t Cumin 1t Sumac 1/2c Plain Unsweetened Greek Yogurt 1 Lemon, zested and juiced 1 Garlic Clove, grated 1/4c Cilantro, chopped 1/4c Fresh Mint, Chopped 1 Small Red Chile, chopped Method: Preheat oven to 425. Toss sweet potato wedges and carrots with olive oil, salt and pepper, chili powder, harissa and cumin. Arrange in a single layer on a greased baking sheet. Roast until golden brown, 25-35 minutes tossing occasionally so they cook evenly. While sweet potatoes and carrots are roasting, make the yogurt sauce. Mix greek yogurt with lemon zest, juice, grated garlic, cilantro, mint and a pinch of salt and pepper. Arrange veggies on a platter and drizzle with yogurt sauce. [Did you know?] When you’re barbecuing, remember to keep it cool! Exposing meat to high-temperature cooking such as grilling causes several unhealthy chemicals to form. Two of them – heterocyclic amines, or HCAs, and polycyclic aromatic hydrocarbons, or PAHs – are known to cause cancer in animals, and are suspected to increase the risk in humans, as well. My type of *almost* no-heat cooking 🍅🍑🧀 Toss sweet, ripe tomatoes (sun golds here ), peaches and nectarines, thinly sliced red onions, basil, and charred corn (get a cast iron super hot and cook the corn until blackening on all sides ) with both rice and balsamic vinegars and a few generous glugs of olive oil. Season w/ s + p. Top with two plump (*room temp* ) pieces of creamy, luscious burrata or any kind of fresh mozz. Mop up with torn chunks of toasted bread. Repeat. We also ate our salad with prosciutto, which I highly recommend 👌🏼What are your go-to summer easy (no or low heat ) meals?

I’ve been eating/cooking healthy at home as much as possible to balance out all the times I want to go out for fried chicken, ice cream, and craft beer!! My mom and I are trying to incorporate more seafood into our diets, which is pretty easy when we have access to amazing fresh shrimp like these. We served them over a warm grains (we used farro ) and corn salad with creamy coconut milk seasoned with garlic, turmeric, and ginger and topped with crispy fried onions, recipe courtesy of @bonappetitmag . It’s not fried chicken, but it’ll do😋👌🏼

I’ve been so inspired by summer produce lately! 🌈 I made falafel sandwiches with loads of summer produce that I got from @iovinebrothersproduce at @rdgterminalmkt ❤️ Inside the pitas, I have heirloom cherry tomatoes, peaches, corn, jalapeños, cucumbers, red onions, parsley, cilantro and mint tossed together in a harissa vinaigrette and then the whole thing got a drizzle of tahini. Wir haben Zucchini selbst angebaut. Daraus lassen sich sehr leckere Spießchen machen 🤤 Dazu marieniere ich die Zucchini in einer Kräutermarinade.
