Yesterday was the latest of my "cook recipes from @seriouseats " escapades. This is fried rice with kimchi and Spam. Would you believe this is rhe first time I've had Spam? The taste and texture kind of remind me of Vienna sausages, though Spam has a smoother texture and a milder flavor. Anyways, I don't have access to a wok (though I think I might still own one, just maybe ), but this still turned out very tasty! Chris and Becky’s social distancing mountain biking tour of the south: Day 6, Asheville, North Carolina. Took a 40 minute drive south to the DuPont National Forest and did a 19 mile loop and climbed 2,225 ft!! It was hard work but the downhills made it worth it!! We came back to hotel, showered and I took a well deserved cat nap. Then we went to the Blackbird Restaurant for an amazing dinner!! I had the corn and goat cheese pie which had a pecan crust and was served on a bed of wilted kale. The British guy had the ribeye with whipped potatoes and collared greens. For dessert banana pudding with rum balls. My favorite thing was the collard greens! It had a secret hot sauce that it was braised in and it was phenomenal! The second best thing was the dessert!! Who would have thought banana pudding could taste so good!! Chocolate chip COOKIES!! 🍪 The ultimate dessert comfort food. There is literally nothing like a warm chocolate chip cookie with a cold glass of milk and your favorite show/movie on Netflix 😬 These cookies are ooey-gooey, soft, chewy and absolutely divine! 🍫 This may not be the “healthiest” recipe, but it’s a delicious one and I stand by it! And as I’ve said many times before, I believe that life is all about balance. Finding YOUR balance. Living your life to the fullest, being physically active, getting enough sleep/rest, eating and drinking, and finding your beautiful balance ⚖️ Ingredients needed: 3 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 2 sticks softened unsalted butter 1/2 cup sugar 1 1/4 cup light brown sugar 1 1/2 teaspoons vanilla extract 2 large eggs 2 cups semi-sweet and dark chocolate chips (plus an extra 1/4 cup more to place on top before baking ) *Once my cookie dough is all set, I usually place the bowl in the fridge to let all the flavors meld together. This will give you a chewier, softer cookie! *I use a medium cookie scoop (1.5 tablespoon ) and roll each scoop into a ball - onto a cookie sheet. *I then gently press down each ball of dough and place extra chocolate chips on each cookie! This is totally optional but seeing the chips on the tops of each cookie once their baked is literally like an invitation to take a delicious bite! *Bake at 375•F for 10-12 minutes! This recipe will yield 24 cookies! for plastic-free July I thought it would be helpful to share some of my sustainable plastic swaps! let me be clear, you do NOT have to buy expensive products to practice sustainability. when I first started my sustainability journey, I felt pressured to buy all of these ridiculously expensive products but... I’m on a college student budget and that’s just not possible! And that’s ok! here are some of my affordable favs: 1. a veggie scrubber, bamboo straws for smoothies, matchas, etc 2. reusable silicon bags- AMAZING alternative to ziploc ( @stasherbag is my all time fav brand ) 3. old jars- you do not have to buy new jars! Use ones from jams, pasta sauces, pickles, etc and just wash and use for bulk stuff 4. glass Tupperware- I also have old plastic Tupperware and yes it’s plastic but am I going to throw it away just to get class ones? No. that’s part of sustainability- reusing things you already have 5. Lastly, this month I’ll be doing a lot of shopping at bulk stores (hellloooo @glasspantrymilwaukee ) and getting my veggies from a local farmer i hope this helps! more tips, experiences without plastic and more coming at ya this July♻️

Two Lemon Poppyseed Muffins, vegan/gf, 106 cal 💛 Recipe makes only 2 muffins 🍋🍋 For you and you. . . . OK, enough no-baking, let’s do some baking! 👩‍🍳 And small-batch baking because who wants to deal with those pesky leftovers. Did you see my freezer in the stories yesterday? It’s not normal 😬 And I have a whole commercial-size one in my basement, full of LEFTOVERS and ice cream (duh ) If you have the same “dessert ADD” that I do, then these small-batch recipes are for you. . . . The muffins are the FLUFFY, zesty, full of tiny poppy seed explosions in every bite. Throw in a heaping tbsp wild bluebs from frozen too if u wanna be extra EXTRA!! who’s making these? 🍋 . . . - 2 tbsp applesauce (30 g ) (sub mashed banana ) - 1 tbsp milk, I use almond (15 g ) - 2 tsp sugar (8 g ) - 1 tsp oil (5 g ) - 1 tsp lemon juice and zest (adjust to taste ) - 1/4 tsp vanilla extract - 1/4 cup flour, gf if desired (30 g ) - 1/4 tsp baking powder - 1 tsp poppy seeds . . . . Makes 2 standard size muffins: 1. Preheat oven to 350F and grease two regular sized muffin cavities. 2. Mix applesauce, milk, sugar, oil, vanilla, lemon juice, zest. 3. Whisk together flour, and baking powder, pinch of salt. 4. Combine the two (don’t overmix, only fold ). 5. Fold in poppy seeds. 6. Transfer to muffin pan and bake 20-25 minutes. 7. Pro-tip: If you want a really domey muffin, bake the first 5 minutes at 425F. 8. Enjoy your fresh muffins!

[ #korooplasticfree ] siete anche voi tipi da “un panino e via”? A me piace tantissimo - pane fatto in casa, una cremina e tante verdure croccanti ma ancora di più mi piace portarmelo in giro senza plastica!! Oggi ho preparato un’infornata di BAGELS SEMINTEGRALI e li ho farciti con hummus, insalata e peperoni arrostiti. E per avvolgerlo ho usato il wrap cerati, una invenzione fighissima! Si tratta di tele di cotone rese impermeabili da un sottilissimo strato di cera - di api o vegetale, come i miei leaf wraps di @beebeewraps 🌱 Li trovate su @greentribu e ve ne parlo meglio su @koroo .it con altre alternative alla pellicola di plastica per alimenti. Per i bagels invece: - 500 g farina tipo 2 - 5 g lievito di birra secco (oppure 12 g di lievito di birra fresco ) - 10 g sale marino - 1 cucchiaino malto d’orzo - 550 ml acqua tiepida circa - 10 g olio extravergine di oliva - 1 cucchiaio bicarbonato di sodio Sciogliere il lievito di birra e il malto d’orzo il 500 gr di acqua, poi versarle nella ciotola con la farina. Aggiungere l’olio extravergine e iniziare a impastare. Unire il sale e continuare a impastare, aggiungendo il resto dell’acqua. Formare una palla, lasciar riposare in una ciotola in luogo caldo, finché non raddoppia (circa 2 ore ) Riprendere l’impasto e trasferirlo su un piano leggermente infarinato. Dividere l’impasto in porzioni da 80 gr circa, formare delle palline e pirlare bene sul fondo. Disporre su una teglia ricoperta di carta forno e lasciare riposare per 30 minuti. Nel frattempo, in una pentola capiente, scalda 5 litri di acqua. Aggiungere il bicarbonato. Riprendere le palline di impasto, praticare un buco al centro allargandolo su un dito. Cuocere pochi bagel alla volta nell’acqua bollente: farli bollire un minuto, girarli sull’altro lato e cuocerli per lo stesso tempo. Scolare molto bene con una schiumarola. Disporre i bagel cotti sulla teglia, ben distanziati. Distribuire i semi di sesamo sulla superficie dei bagel, poi cuocere in forno già caldo a 200° per circa 20 minuti, finché sono ben dorati. . . . #goodfoodlab #bagelsandwich #plantbased #menoplastica
