Had a late dinner tonight and tried to keep it “light” so I used hearts of palm pasta in a marinara sauce with homemade Turkey meatballs 🍝 Wtf is hearts of palm and why should you eat it? * Rich in fiber, potassium, iron, zinc, phosphorus, copper, vitamins B2, B6, and C. * A good source of protein, riboflavin, and potassium. * Full of dietary fiber, vitamin C, folate, calcium, iron, magnesium, phosphorus, zinc, copper, and especially, manganese. * Have a favorable ratio between omega-3 and omega-6 fatty acids. It didn’t taste exactly like pasta, but what veggie pasta does? Was it close enough with a pretty good texture? Something sweet? The answer is yes when I have half of a can of pumpkin in the fridge and 3 bananas screaming that it’s their last days. My baking resembles my cooking. I get the job done. Quickly. Banana pumpkin bread 2C almond flour 1/4C coconut flour 2t pumpkin pie spice 1t cinnamon 1/4t sea salt 1t baking soda 1/2C pumpkin purée 1/4C coconut oil 2 bananas 3 eggs 1t vanilla 2T maple syrup Chocolate chips (I use @enjoylifefoods ) Preheat oven to 350°. Combine wet ingredients (I use @vitamix ). Add dry into separate bowl. Combine and mix. Add desired amount of chocolate chips. Pour into greased or parchment lined loaf pan. Here’s the final product from the Instapot Chicken and Veggie stew video. It’s simple and quick, but boy oh boy it’s flavorful! . Here’s the recipe if you didn’t catch it or want to skip all of my rambling to just get cooking. . Ingredients: ~ 6-8 boneless skinless thighs (or any other chicken ) *omit if vegetarian or vegan ~ 3 large carrots (or 10-12 baby carrots ), peeled and diced into bit sized pieces ~ 2 stalks of celery, diced ~ 1/2 of one large onion or 1 whole small onion (red,white or yellow ) ~ 1 15 oz. can diced tomato ~ 2 cloves garlic, minced ~ 2 cups of chicken or veggie stock ~ 2 bay leaves ~ 1/2 tsp Rosemary ~ 1/2 tsp thyme ~ 1 tsp Italian seasoning ~ pinch of red pepper flakes ~ 1 tsp salt ~ 1/2 tsp black pepper . Instructions: ~ Add all ingredients to the Instapot or crockpot and stir to combine ~ for the Instapot: set on Manual pressure or “pressure cook” setting for 12 minutes. ~ let the steam release naturally. ~ for the crockpot: set on high for 4 hours or low for 6-8 hrs. ~ pour into bowls and let stand for a couple minutes to cool before serving. ~ Serve with crunchy bread and top with fresh chopped parsley if you’re feeling fancy. . Oils ain’t oils! 💛 Oils are one of the most confusing areas of health and nutrition. When it comes to heating oil, some types are far more dangerous than others and the recent evidence might surprise you! Comprehensive study from 2018 analysed 10 different oils for stability and safety at high temperatures. It found that extra virgin olive oil, coconut oil and peanut oil were most resistant to reacting with oxygen and breaking down (oxidation ). Plus, they gave off the lowest amounts of toxic by-products. (ACTA Scientific Nutritional Health ) . Seed oils such as canola, sunflower and grapeseed however, quickly oxidised when heated and produced the most harmful by-products including aldehydes and lipid peroxides - linked to Alzheimer’s disease, rheumatoid arthritis, cancer etc. Canola oil was the most concerning as it started producing harmful compounds much quicker than any other oil at a staggering rate. . The study also found that olive oil had the highest amount of antioxidants out of all oils, putting it at the top of their results. However it didn’t take into account other factors such as the content of medium-chain triglycerides (MCTs ) in coconut oil - the amazing fats that give quick energy and tend not to be stored by the body, which could make it a preferred choice for many. Also the coconut oil used in the study was a refined version (not virgin ) - had they used the latter it could have yielded even higher results for coconut oil. . Avocado had one of the lowest scores for oxidative stability and produced more toxic by-products than olive or coconut oils. . Soyabean oil is the most commonly consumed oil in the US and a study from earlier this year found it reduced oxytocin – also known as our ‘love hormone’ or ‘happy hormone’ (Endocrinology, 2020 ). . Significant effects were found on the hypothalamus, the area of the brain that regulates body weight, fertility and the way we respond to stress. Around 100 different genes were affected by soybean oil, which could have potential implications for diseases such as Autism and Parkinson’s. F O O D // you know what feels like fall? Granola. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sharing my favorite easy and healthy granola recipe today. Traditional store bought granola can be loaded with sugar (and often has gluten, which I'm allergic to ). I started making my own about a year ago, and it's so much better than anything you can buy. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ what you need: -4 cups of old-fashioned gluten free oats (I use these ) -1.5 cup of nuts and/or seeds - 1/2 tsp cinnamon -1 tsp vanilla extract - 3/4 tsp salt - 1/2 cup of avocado oil (you can use olive oil, but you’ll def. notice the taste ) -1/2 cup of sweetener like maple syrup or honey optional: 2/3 cups of any other add-ins you want like dried fruit, chocolate or white chocolate chips ⠀⠀⠀⠀⠀⠀⠀⠀⠀ how to make: -Pre-heat oven to 350 degrees and line a rimmed baking sheet with parchment paper. -In a large mixing bowl, combine oats, add-ins, cinnamon, salt and vanilla extract. -Add oil and sweetener. Stir and make sure every oat is coated. -Pour onto baking sheet. Try to keep granola in an even layer. -Bake until lightly browned, about 10 minutes. Stir. Banana bread mug cake 🍌 I’m obsessed with @brunchesoflove banana bread mug cake recipe 🤩 I’ve made it soooo many times & wanted to share it with you Ingredients: 1 mashed banana, 1 egg, 3 tbsp flour, optional: choc chips Directions: mix the mashed banana & egg in a mug. Stir in the flour & add choc chips if desired. Microwave for 2-2.5 mins & enjoy! (I also topped mine with vanilla ice cream ) This mug cake tastes amazing, and I love that it only needs 3 ingredients & 1 measuring spoon! I’m not a huge fan of mug cakes that need tons of ingredients and measuring spoons, because at that point I may as well bake a larger batch recipe. A Little Hello... Although I’ve been here for a while, many of you have joined me along the way and so I thought I’d do an intro post. Let’s start with an insight into my background. I’ve always been into food and as I grew older my passion for health and nutrition grew. This enthusiasm stemmed from mum’s interest when I was growing up. In my teens I really started to appreciate how beneficial food can be ... far beyond it’s taste (which is still fundamental to my approach to food ). As a result, I went to study an undergraduate in exercise and nutrition and then a masters in Human Nutrition at @uniofsurrey . After 5 years at university I set up Jenna Hope Nutrition. Hopefully you know how passionate I am about spreading my message that nutrition should first and foremost be enjoyable, exciting and NEVER stressful. Life is far too stressful for our diet to be an added stress. I’m all about stripping it back and providing smart, simple and sustainable advice. I believe health requires a 360 degree approach, taking into account your physical, mental and social wellbeing. Of course, I really believe that our diets and lifestyle can support our long-term health but equally a glass of wine or a bar of chocolate can also be pivotal to our social and mental wellbeing (the key here is moderation! ) My drive for this page is to help reduce the stress around nutrition, bust some of the myths and encourage you all to adopt small habits which can make you feel better on a daily basis.
